Yes, by writing the code needed to do so, preferably within the
emerging framework of custom_log
<http://devel.squid-cache.org/custom_log/>.

Note: As another user said, MAC addresses will only be valid within
the same Ethernet LAN as the Squid proxy, only if there is no router
between the user and the proxy.
